Here’s the straight truth: When you go vegan, you’ve got to try new things. Luckily, tons of ethnic foods—probably some that you’ve never even heard of—are naturally vegan. No haggling with waiters needed. Tabbouleh (along with other Middle Eastern faves such as hummus and falafel) is a must-try. Eat it with pita bread or put it in a wrap with falafel.
Ingredients
- 2 cups shredded nondairy cheese
- 1 vegan pizza crust
- 2 cups chopped broccoli florets, steamed
- 2 cups chopped arugula
- 1 1/2 cups cooked and cubed tempeh
Instructions
- Preheat the oven to 450 F.
- Sprinkle the nondairy cheese over the pizza crust. Spread the broccoli florets evenly over the top, followed by the arugula and cooked tempeh.
- Baked until the crust is crispy and golden and the cheese is melted, about 8 to 10 minutes.

- 2 apples, cored and sliced
- 1 Tbsp. cinnamon
- 1 tsp. brown sugar
- 1/2 cup walnuts, chopped
Instructions
- Preheat the oven to 400F.
- Place the apple slices in a pan and sprinkle with the cinnamon and brown sugar. (Add more or less to taste!) Top with the walnuts.
- Bake for 20 minutes, or until warm and gooey.
